    Chop the onion and mince the garlic. Cut the chicken thighs into bite-sized pieces.

    Sauté Onions and Garlic

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Add the bite-sized chicken pieces to the pot. Cook until browned on all sides, about 6-8 minutes.
