    Prepare the Chicken

    In a bowl, mix olive oil, garlic powder, salt, black pepper, and dried oregano. Add the chicken breasts and coat them well with the marinade. Let them sit for 15 minutes.

    Chop the Vegetables

    While the chicken is marinating, peel and slice the carrots, chop the yellow squash, and bell pepper into bite-sized pieces. Slice the onion and chop the scallions.

    Cook the Chicken

    In a large skillet over medium heat, add the marinated chicken breasts. Cook for about 6-7 minutes on each side, or until golden brown and fully cooked through (internal temperature should reach 165°F or 75°C). Remove from the skillet and let it rest.

    Sauté the Vegetables

    In the same skillet, add a little more olive oil if needed. Add the chopped onion, carrots, and bell pepper first. Sauté for about 5 minutes until they start to soften. Then add the green beans and yellow squash. Cook for another 5-7 minutes until all vegetables are tender but still crisp.

    Finish the Dish

    Chop the cooked chicken into slices and return it to the skillet with the vegetables. Add chopped scallions, fresh parsley, and thyme. Stir everything together and cook for an additional 2-3 minutes until heated through.
