    Prepare the Chicken

    In a large pot, heat half of the palm oil over medium heat. Add the chicken pieces and sear until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.

    Sauté the Vegetables

    In the same pot, add the remaining palm oil. Sauté the chopped onions and leeks until translucent, about 5 minutes. Add the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

    Combine Ingredients

    Return the seared chicken to the pot. Add the finely chopped cassava leaves, salt, black pepper, crushed red pepper flakes, and the bouillon cube. Stir well to combine.

    Simmer the Sauce

    Pour enough water into the pot to cover the chicken and cassava leaves. Bring to a boil, then reduce heat to low. Cover and let simmer for about 30-40 minutes, or until the chicken is cooked through and tender. Stir occasionally and add more water if necessary to prevent sticking.

    Final Taste Adjustment

    Taste the sauce and adjust the seasoning if necessary, adding more salt or spices to your preference.
