Preparation

    Prepare the Bitterleaf

    If using dried bitterleaf, soak it in warm water for about 30 minutes to soften. If using fresh bitterleaf, wash it thoroughly to remove any bitterness and then chop it roughly.

    Prepare Chicken

    Cut the chicken thighs into bite-sized pieces, season them with salt and black pepper, and set aside.

Cooking

    Sauté Aromatics

    In a large pot, heat the palm oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and ginger, and stir for another 2 minutes until fragrant.

    Cook Chicken

    Add the seasoned chicken pieces to the pot and cook until browned on all sides, about 7-10 minutes.

    Add Bitterleaf and Broth

    Stir in the prepared bitterleaf and add the chicken broth. Bring to a boil, then reduce heat to low and cover. Simmer for 20 minutes.

    Incorporate Groundnut Paste

    After 20 minutes, stir in the groundnut paste, salt, and crushed red pepper flakes. Mix well and let it simmer for another 10 minutes, adjusting the seasoning if necessary.

    Serve the Chicken Bitterleaf (Ndole) Sauce hot with your choice of fufu: corn, yam, garri, white rice, cassava, plantain, or fonio.
