Cauliflower Pilaf

Prepare the Cauliflower
Remove the leaves and stem from the cauliflower. Cut the cauliflower into small florets.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the chopped onion, sliced leeks, and minced garlic. Sauté for 3-5 minutes until the onion is translucent.

Add Carrots and Peas
Stir in the diced carrots and frozen peas. Cook for an additional 3 minutes.

Combine with Cauliflower
Add the cauliflower florets to the skillet and mix well.

Add Broth and Season
Pour in the vegetable broth, then season with salt and pepper. Bring to a boil.

Cook the Pilaf
Reduce heat to low, cover, and let simmer for 15-20 minutes, or until the cauliflower is tender and the liquid is absorbed.
Jollof Rice

Add Bell Pepper and Spices
Stir in the chopped bell pepper, thyme, and bay leaf. Cook for 2-3 minutes.

Incorporate Tomatoes
Pour in the pureed tomatoes, and season with salt and pepper. Cook for about 10 minutes until slightly thickened.

Add Rice and Broth
Stir in the long grain rice, then add vegetable broth. Bring to a boil.

Cook the Rice
Cover, reduce heat to low, and let simmer for 20-25 minutes, or until the rice is cooked and liquid is absorbed.
Eggplant Stew

Prepare the Eggplant
Cube the eggplant and sprinkle with salt. Let sit for 10 minutes, then rinse and drain.

Add Eggplant and Tomatoes
Add the cubed eggplant and diced tomatoes to the pot. Stir well and cook for 10 minutes, until the eggplant is tender.

Season the Stew
Season the stew with salt and pepper. Stir in chopped cilantro and cook for an additional 5 minutes.
