Preparation

  1. 1

    Prepare the Ingredients

Wash the cabbage thoroughly and chop it into bite-sized pieces. Peel and finely chop the onion and garlic. Measure out all the spices and pumpkin seeds.

Cooking

  1. 2

    Sauté Aromatics

In a large pot, heat the palm oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional 2 minutes until fragrant.

  2. 3

    Add Cabbage

Add the chopped cabbage to the pot and stir well to combine. Cook for about 5-7 minutes until the cabbage starts to wilt.

  3. 4

    Incorporate Spices and Pumpkin Seeds

Stir in the thyme, paprika, black pepper, and salt. Mix well, then add the pumpkin seeds to the pot, stirring to combine everything evenly.

  4. 5

    Add Liquid and Simmer

Pour in the vegetable broth or water, bringing the mixture to a gentle boil. Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes until the cabbage is tender.

Serving

  1. 6

    Serve the Stew

Once the stew is ready, taste and adjust seasoning if necessary. Serve hot, garnished with additional pumpkin seeds if desired.
