    Prepare the Ingredients

    Chop the onion, mince the garlic, slice the carrots, and dice the potatoes. Cut the beef into 1-inch cubes if not pre-cut.

    Season the Beef

    In a large bowl, combine the beef cubes with salt, black pepper, thyme, and rosemary. Mix well to ensure the beef is evenly coated.

    Brown the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the seasoned beef cubes in batches, browning them on all sides. This should take about 5-7 minutes. Remove the beef and set it aside.

    Sauté the Vegetables

    In the same pot, add the chopped onions and minced garlic. Sauté for about 3-4 minutes until the onions are translucent. Stir frequently to avoid burning the garlic.

    Add Remaining Ingredients

    Return the browned beef to the pot. Add the sliced carrots, diced potatoes, canned tomatoes (with their juice), beef broth, and bay leaves. Stir everything together.

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for at least 1.5 to 2 hours, or until the beef is tender and the flavors have melded. Stir occasionally.

    After the stew has simmered, taste and adjust seasoning if necessary. You can add more salt, pepper, or herbs to suit your taste.
