    Prepare the Ingredients

    Wash and cut the beef into cubes. Chop the onion, bell pepper, and scotch bonnet pepper. Mince the garlic and grate the ginger.

    Soak Pumpkin Seeds (optional)

    If your pumpkin seeds are not already ground, soak them in warm water for 30 minutes and then grind them into a fine paste using a blender or food processor.

    Cook the Beef

    In a large pot, heat the palm oil over medium heat. Add the chopped onions and sauté until they become translucent. Add the beef cubes and sear until browned on all sides.

    Add Aromatics

    Stir in the minced garlic, grated ginger, chopped bell pepper, and scotch bonnet pepper. Cook for about 5 minutes, stirring occasionally.

    Add Ground Pumpkin Seeds

    Add the ground pumpkin seeds to the pot and stir well. Pour in enough water to cover the beef and seeds mixture. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.

    Season the Stew

    Add the seasoning cubes, salt, black pepper, thyme, and bay leaves to the pot. Stir to combine and continue to simmer for another 20 minutes, until the beef is tender and the stew has thickened.

    Remove the bay leaves and serve the beef pumpkin seed stew hot, accompanied by rice or fufu.
