Method

Beef Okra Stew Preparation

  1. 1

    Sear the Beef

In a large pot, heat the vegetable oil over medium-high heat. Add the cubed beef and sear on all sides until browned. Remove beef from the pot and set aside.

  2. 2

    Sauté the Aromatics

In the same pot, add the chopped onions and sauté until translucent. Add the minced garlic and continue to sauté for another minute until fragrant.

  3. 3

    Add Tomatoes and Spices

Stir in the diced tomatoes, salt, black pepper, and cayenne pepper. Cook for about 5 minutes until the mixture thickens slightly.

  4. 4

    Combine Beef and Broth

Return the seared beef to the pot and pour in the beef broth. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour, or until the beef is tender.

  5. 5

    Add Okra

Add the sliced okra to the pot, stirring gently. Simmer for an additional 15-20 minutes, or until the okra is tender and cooked through.

  6. 6

    Finish with Lemon Juice

Stir in the lemon juice, adjust seasoning if necessary, and let simmer for another 5 minutes. Remove from heat.

Fufu Preparation

  1. 7

    Prepare the Fufu

Follow the package instructions for your chosen fufu option (corn, yam, garri, etc.). Usually, it involves boiling and stirring until it reaches a smooth, stretchy consistency.
