Preparing the Beef
In a large pot, heat a splash of palm oil over medium heat. Add the cubed beef and sear until browned on all sides, about 5-7 minutes. Remove the beef and set aside.

Preparing the Cassava Leaves
If using fresh cassava leaves, wash them thoroughly and chop finely. If using dried cassava leaves, soak them in warm water for about 15 minutes to rehydrate before chopping.

Combining Ingredients
Return the browned beef to the pot. Add the prepared cassava leaves, salt, black pepper, crushed red pepper flakes, ground coriander, and dried thyme. Stir well to combine.

Simmering
Pour in enough water to cover the ingredients (about 1-2 cups). Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 45 minutes, or until the beef is tender and the flavors meld.
