    Prepare the Udon Noodles

    Cook the udon noodles according to package instructions. Drain and set aside.

    Make the Tempura Batter

    In a bowl, mix the all-purpose flour and cornstarch. Gradually add cold water while stirring lightly to create a lumpy batter. Add ice cubes to keep the batter cold.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil to 180°C (350°F).

    Fry the Tempura

    Dip the shrimp, sweet potato slices, and green beans in the tempura batter and carefully place them in the hot oil. Fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.

    Prepare the Miso Soup

    In a pot, bring 4 cups of water to a boil. Add miso paste and stir until dissolved. Add cubed tofu and simmer for a few minutes.

    Assemble the Dish

    In a bowl, place the cooked udon noodles and pour the miso soup over them. Top with the tempura shrimp and vegetables. Drizzle with soy sauce and mirin to taste.
