Directions for Chicken Katsu
1. Prepare the Chicken
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.
2. Season the Chicken
Sprinkle both sides of the chicken with salt and black pepper.
3. Set Up Breading Station
Prepare three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.
4. Bread the Chicken
Dredge each chicken breast first in flour, shaking off excess, then dip into the egg, and finally coat with panko breadcrumbs, pressing gently to adhere.
5. Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot.
6. Fry the Chicken
Carefully add the breaded chicken to the hot oil and cook for 3-4 minutes on each side, or until golden brown and cooked through.
7. Drain the Chicken
Remove the chicken from the skillet and place on paper towels to drain excess oil.
8. Serve
Slice the chicken katsu and serve with tonkatsu sauce, alongside miso soup or salad.
