Prepare the Teriyaki Sauce
In a small saucepan over medium heat, combine soy sauce, mirin, sugar, minced garlic, and grated ginger. Stir until the sugar dissolves and the mixture begins to simmer. Lower the heat and let it simmer for about 5 minutes until slightly thickened. Remove from heat and set aside.

Cook the Chicken
Heat sesame oil in a large skillet or frying pan over medium-high heat. Add the chicken thighs and cook for about 5-7 minutes on each side until golden brown and cooked through. Ensure the internal temperature reaches 75°C (165°F).

Add the Sauce
Pour the prepared teriyaki sauce over the cooked chicken in the skillet. Cook for an additional 2-3 minutes, turning the chicken to coat evenly in the sauce.

Garnish and Serve
Remove from heat and let it rest for a minute. Slice the chicken and serve it on a plate, garnished with chopped green onions and toasted sesame seeds. Accompany with miso soup or salad.
