    Prepare the Marinade

    In a large bowl, combine the lamb cubes, white vinegar, minced garlic, grated ginger, brown sugar, turmeric powder, cayenne pepper, cumin powder, coriander powder, black pepper, and salt. Mix well until the lamb is evenly coated. Cover the bowl and let it marinate in the refrigerator for at least 2 hours, or overnight for better flavor.

    Cook the Lamb

    In a large pot or Dutch oven, heat the oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5-7 minutes.

    Add the Spices

    Add the marinated lamb (including the marinade) to the pot. Stir well and cook for about 5 minutes until the lamb is browned on all sides.

    Incorporate Vegetables

    Add the chopped tomatoes, bay leaves, cardamom pods, and cinnamon stick to the pot. Stir to combine everything together.

    Simmer the Dish

    Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together. Stir occasionally and add more water if necessary to prevent sticking.

    Once the lamb is tender, taste and adjust seasoning with salt if needed. Remove from heat and let it rest for 10 minutes before serving.
