    Prepare the Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

    Cook the Onions

    In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and sauté until they turn golden brown.

    Add Ginger-Garlic Paste

    Stir in the ginger-garlic paste and sauté for another minute until fragrant.

    Add Mixed Vegetables

    Add the mixed vegetables to the pot and cook for 5 minutes, stirring occasionally.

    Add Spices

    Stir in the biryani masala, turmeric powder, and salt. Mix well to coat the vegetables with the spices.

    Add Rice and Water

    Add the soaked and drained rice to the pot, followed by the water. Stir gently to combine.

    Cook the Biryani

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it cook for about 20 minutes, or until the rice is cooked and water is absorbed.

    Fluff and Garnish

    Remove the pot from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped coriander, mint, and lemon juice.

    Prepare the Raita

    In a mixing bowl, combine the plain yogurt, grated cucumber, cumin powder, and salt. Mix well until smooth.

    Garnish the Raita

    Stir in the chopped coriander leaves for added flavor and serve chilled.
