    Prepare the Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.

    Cook the Shrimp

    In a large pan, heat 2 tablespoons of cooking oil over medium heat. Add the sliced onions and sauté until golden brown. Add the ginger-garlic paste and cook for 2 minutes until fragrant.

    Add Spices and Shrimp

    Stir in the chopped tomato, biryani masala, turmeric powder, red chili powder, and salt. Cook for another 5 minutes until tomatoes soften. Add the shrimp and cook until they turn pink, about 3-4 minutes.

    Layer the Biryani

    In a separate pot, bring 4 cups of water to a boil. Add the drained rice and cook until it's about 70% done. Drain the rice again. In the pan with the shrimp, layer the partially cooked rice on top. Sprinkle chopped cilantro and mint leaves over the top.

    Final Cooking

    Cover the pan with a tight lid and cook on low heat for about 15-20 minutes until the rice is fully cooked and has absorbed all the flavors.

    Mix the Raita

    In a bowl, whisk the yogurt until smooth. Add the grated cucumber, chopped mint leaves, cumin powder, and salt. Mix well to combine.

    Chill the Raita

    Refrigerate the raita for at least 15 minutes before serving to allow the flavors to meld together.
