Method

Preparation of Paneer

    Cut Paneer

    Cut the cottage cheese (paneer) into cubes and set aside.

    Heat Ghee

    In a pan, heat 2 tablespoons of ghee or oil over medium heat.

    Fry Paneer

    Once the ghee is hot, add the paneer cubes and fry them until they are light golden brown. Remove and set aside.

Preparation of Gravy

    Sauté Onions

    In the same pan, add the finely chopped onion and sauté until it turns translucent.

    Add Ginger-Garlic Paste

    Add 1 tablespoon of ginger-garlic paste to the onions and sauté for another 2 minutes until the raw smell disappears.

    Add Tomato Puree

    Pour in the pureed tomato and cook for about 5-7 minutes until the oil starts separating from the mixture.

    Soak Cashews

    Soak the cashew nuts in warm water for about 10 minutes, then blend them to a smooth paste and add it to the gravy.

    Add Spices

    Add the green cardamom, cumin seeds, turmeric powder, red chili powder, and salt to taste. Mix well.

    Add Water

    Pour in 1 cup of water, stir, and let it simmer for about 10 minutes.

    Add Cream

    Add 100 ml of cream and garam masala to the gravy. Stir well and cook for another 2-3 minutes.

Final Assembly

    Combine Paneer and Gravy

    Gently add the fried paneer cubes to the gravy and cook for another 5 minutes on low heat, allowing the flavors to meld.

    Serve

    Serve hot with naan, roti, or rice. Garnish with a drizzle of cream or some chopped cilantro if desired.
