Paneer Preparation

    Prepare the Paneer

    In a large pot, bring the milk to a boil over medium heat, stirring occasionally to prevent it from burning. Once it boils, reduce the heat to low and add the lemon juice, stirring gently until the milk curdles. Remove from heat and let it sit for 10 minutes.

    Strain the Curd

    Line a colander with cheesecloth or a clean kitchen towel. Pour the curdled milk into the colander to strain out the whey. Rinse the curds under cold water to remove the lemon juice flavor. Gather the cloth and squeeze out as much liquid as possible. Tie the cloth and place a weight on top to press the paneer for about 30 minutes.

    Cut the Paneer

    Once pressed, unwrap the paneer and cut it into cubes. You can either use it fresh or store it in water in the refrigerator until ready to use.

Saag Preparation

    Prepare the Spinach

    Wash the baby spinach thoroughly in cold water and drain. Blanch the spinach in boiling water for 2-3 minutes, then immediately transfer it to an ice bath to stop cooking. Drain and blend the spinach to a smooth puree.

    Cook the Base

    In a large pan, heat oil or ghee over medium heat. Add cumin seeds and let them sizzle for a few seconds. Add the chopped onion and sauté until golden brown.

    Add Aromatics

    Add minced garlic, ginger, and chopped green chili to the pan. Sauté for another 2 minutes until fragrant.

    Spice It Up

    Stir in the turmeric powder, garam masala, and salt. Mix well and cook for 1-2 minutes.

    Combine Spinach and Paneer

    Add the spinach puree to the pan along with 1 cup of water. Stir well and allow it to simmer for about 5 minutes. Gently fold in the paneer cubes and cook for another 5 minutes, allowing the flavors to meld.

    Serve

    Remove from heat and serve the Saag Paneer hot with naan, roti, or rice.
