Making the Paneer

    Boil the Milk

    In a large pot, bring 2 liters of full-fat milk to a boil over medium heat, stirring occasionally to prevent it from burning.

    Curdle the Milk

    Once it comes to a boil, reduce the heat and add 1 cup of lemon juice gradually while stirring. The milk will start to curdle and form curds (paneer).

    Strain the Paneer

    Once the curds have formed, remove from heat. Line a colander with a muslin cloth and pour the curdled milk into it, allowing the whey to drain out. Rinse the curds under cold water to remove the lemon flavor.

    Knead the Paneer

    Gather the muslin cloth and squeeze out excess water. Transfer the curds to a plate and knead them for about 5-7 minutes until smooth and soft.

    Shape the Paneer

    Divide the kneaded paneer into small balls (about the size of a golf ball) and flatten them slightly.

Preparing the Creamy Sauce

    Make the Milk Sauce

    In a separate pot, bring 1 liter of full-fat milk to a boil. Reduce the heat and let it simmer until it reduces to about half its volume.

    Add Sugar and Flavoring

    Once the milk thickens, add 1 cup of sugar, 1 tsp of cardamom powder, and a pinch of saffron strands. Stir well until the sugar dissolves completely.

    Combine Paneer and Sauce

    Gently add the prepared paneer balls to the creamy sauce. Ensure that they are fully submerged. Let them simmer for about 10-15 minutes on low heat.

    Garnish

    Once the paneer balls have absorbed the flavors, turn off the heat. Garnish with chopped pistachios and almonds.

    Cool and Serve

    Let the Ras Malai cool down and then refrigerate for at least an hour before serving. Serve chilled.
