Mixing the Dough
In a large mixing bowl, combine whole wheat flour and salt. Gradually add water while kneading the mixture until it forms a soft dough.

Resting the Dough
Once the dough is kneaded, drizzle oil over it and cover with a damp cloth. Let it rest for at least 30 minutes.
Mint Filling Preparation

Making the Mint Filling
In a blender, add fresh mint leaves, cumin powder, chopped green chili, ginger, and salt. Blend until you have a smooth paste. Adjust salt to taste.
Paratha Cooking

Rolling the Paratha
Divide the rested dough into equal portions. Take one portion and flatten it slightly. Place a spoonful of mint filling in the center. Fold the edges over the filling to seal it and roll it out into a round paratha.

Cooking the Paratha
Heat a clay oven or tandoor. Cook the rolled paratha on the hot surface until golden brown on both sides, brushing with a little oil if desired.

Serving
Serve the hot pudina paratha with yogurt or your favorite chutney.
