    Clean the Prawns

    Rinse the prawns under cold running water and remove the shells. Devine them if necessary and set aside.

    Prepare the Spinach

    Wash the spinach thoroughly to remove any dirt and grit. Blanch it in boiling water for 2 minutes, then drain and chop roughly.

Cooking

    Heat the Oil

    In a large pan, heat the vegetable or mustard oil over medium heat.

    Sauté Onions and Spices

    Add the finely chopped onions to the hot oil and sauté until golden brown. Then add the minced garlic, grated ginger, and slit green chilies. Cook for another 2-3 minutes until fragrant.

    Add Spices

    Stir in the cumin seeds, turmeric powder, coriander powder, and salt. Cook for an additional 1-2 minutes to toast the spices.

    Cook the Prawns

    Add the cleaned prawns to the pan and stir well to coat in the spice mixture. Cook for about 3-4 minutes until they turn pink and opaque.

    Incorporate Spinach

    Add the blanched and chopped spinach to the pan. Stir to combine with the prawns and spices. Pour in 100 ml of water to help create a sauce.

    Finish with Garam Masala

    Sprinkle the garam masala over the dish and mix well. Allow to simmer for another 2-3 minutes until everything is heated through.
