Dough Preparation

Activate the Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

In a large mixing bowl, combine all-purpose flour and salt.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let the Dough Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.
Cooking Naan

Preheat the Tandoor or Oven
If using a tandoor, heat it until it reaches a high temperature (around 500°F or 260°C). If using an oven, preheat it to the highest setting (usually around 500°F or 260°C) with a pizza stone inside.

Shape the Naan
Once the dough has risen, punch it down and divide it into equal portions (about 6). Roll each portion into a ball and then flatten it into an oval or round shape, about ¼ inch thick.

Cook the Naan
If using a tandoor, stick the naan onto the hot walls of the tandoor and cook for about 1-2 minutes until it puffs up and has golden brown spots. If using an oven, place the naan on the hot pizza stone and bake for 3-5 minutes until cooked through.
