Method

Preparation

  1. 1

    Soak the Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.

  2. 2

    Prepare the Marinade

In a large mixing bowl, combine ground lamb, chopped cilantro, chopped mint, minced garlic, grated ginger, cumin powder, coriander powder, red chili powder, garam masala, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

  3. 3

    Add Binders

Add the finely chopped onion and the egg to the lamb mixture. Mix thoroughly until the mixture is well combined and holds together.

  4. 4

    Shape the Kebabs

Take a portion of the meat mixture (about the size of a golf ball) and mold it onto a skewer, pressing it tightly to form a long, cylindrical shape. Repeat until all mixture is used.

Grilling

  1. 5

    Preheat Grill

Preheat your grill to medium-high heat.

  2. 6

    Brush with Oil

Lightly brush the shaped kebabs with oil to prevent sticking and enhance flavor.

  3. 7

    Grill the Kebabs

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until they are browned and cooked through.

  4. 8

    Serve

Remove the kebabs from the grill and let them rest for a few minutes. Serve hot with chutney or yogurt on the side.
