    Prepare the Ingredients

    Chop the spinach, onion, and mince the garlic and ginger. Puree the tomato and set aside.

Cooking

    Heat Oil

    In a large pot or pan, heat the vegetable oil or ghee over medium heat.

    Sauté Onions

    Add the finely chopped onion to the pot and sauté until golden brown.

    Add Garlic and Ginger

    Stir in the minced garlic and ginger, and cook for another 2 minutes until fragrant.

    Add Spices

    Add cumin seeds, coriander powder, turmeric powder, and slit green chili. Stir and cook for 1 minute.

    Cook Lamb

    Add the cubed lamb to the pot, season with salt and black pepper, and cook until browned on all sides.

    Add Tomato Puree

    Pour in the tomato puree and mix well. Cook for about 5 minutes, allowing the mixture to reduce slightly.

    Add Water

    Add the water to the pot, cover, and let it simmer for about 40 minutes or until the lamb is tender.

    Add Spinach

    Once the lamb is tender, stir in the chopped spinach and cook for an additional 5-10 minutes until the spinach is wilted and incorporated.

    Finish with Garam Masala

    Sprinkle garam masala over the dish, stir well, and let it cook for another 2 minutes. Adjust seasoning if necessary.
