    Prepare the Ingredients

    Gather all the ingredients and chop the onion, garlic, and ginger. Cut the lamb shoulder into 1-inch pieces.

    Sauté Onions

    In a large pot, heat 2 tablespoons of oil over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.

    Add Garlic and Ginger

    Add the minced garlic and grated ginger to the pot and sauté for another 2-3 minutes until fragrant.

    Cook Lamb

    Increase the heat to medium-high and add the lamb pieces to the pot. Brown the lamb on all sides, about 5-8 minutes.

    Add Spices

    Stir in cumin seeds, coriander powder, turmeric powder, garam masala, chili powder, and salt. Cook for 2 minutes, stirring frequently.

    Add Tomato Puree

    Pour in the tomato puree and mix well. Simmer for about 5 minutes until the mixture thickens.

    Add Coconut Milk

    Pour in the coconut milk, reduce the heat to low, and cover the pot. Let it simmer for about 1 hour, stirring occasionally, until the lamb is tender.

    Garnish and Serve

    Once the lamb is tender, stir in the chopped cilantro. Adjust the seasoning with salt if needed. Serve hot with rice or naan.
