Preparation

    Heat the Milk

    In a heavy-bottomed saucepan, pour in the full-fat milk and bring it to a boil over medium heat, stirring occasionally to prevent it from burning.

    Reduce and Thicken

    Once the milk boils, reduce the heat to low and let it simmer for about 30-40 minutes, stirring frequently, until the milk reduces to about half its original volume and thickens.

Mixing Ingredients

    Combine Ingredients

    Once the milk has thickened, remove it from heat and let it cool slightly. Stir in the condensed milk and heavy cream until well combined.

    Add Flavorings

    Add the mango pulp, cardamom powder, and saffron strands to the mixture. Mix well until all ingredients are evenly incorporated.

Freezing

    Prepare for Freezing

    Pour the mixture into kulfi molds or any small cups. Ensure they are filled to the top.

    Freeze

    Cover the molds with a lid or plastic wrap and freeze for at least 6-8 hours, or until completely set.

Serving

    Unmold and Serve

    To serve, remove the kulfi from the molds by running warm water over the outside of the molds for a few seconds. Carefully pull out the kulfis.

    Garnish

    Sprinkle the chopped pistachios on top of the kulfi before serving for an added crunch and presentation.
