Kofta Preparation

    Prepare the Kofta Mixture

    In a mixing bowl, combine the cottage cheese, finely chopped cashew nuts, grated ginger, coriander powder, turmeric powder, chopped green chili, and salt. Mix well until all ingredients are combined.

    Shape the Koftas

    Take small portions of the mixture and shape them into round balls or patties.

    Fry the Koftas

    Heat oil in a pan over medium heat. Add the shaped koftas and fry until they are golden brown on all sides. Remove and set aside on paper towels to drain excess oil.

Curry Sauce Preparation

    Prepare the Sauce Base

    In the same pan, add more oil if needed and sauté the chopped onion until translucent. Add chopped tomatoes and cook until soft.

    Add Spices

    Stir in the garam masala and cook for a few minutes until the spices are fragrant.

    Combine with Cream

    Pour in the cream and water, stirring to combine. Bring to a simmer.

    Finish the Sauce

    Let the sauce simmer for about 5-10 minutes until it thickens slightly. Adjust salt to taste.

    Add Koftas

    Carefully add the fried koftas to the sauce and let them simmer together for a few minutes, allowing the flavors to meld.

Serving

    Garnish

    Garnish the kofta curry with chopped cilantro before serving.

    Serve hot with rice or naan.
