Method

Preparation of Rice

  1. 1

    Rinse the Rice

Start by rinsing the basmati rice under cold water until the water runs clear. This helps remove excess starch and ensures the rice cooks evenly.

  2. 2

    Soak the Rice

Soak the rinsed rice in water for about 30 minutes. This will help soften the rice and reduce cooking time.

Cooking Kheer

  1. 3

    Cook the Rice

In a large saucepan, bring the 4 cups of whole milk to a boil over medium heat. Once boiling, drain the soaked rice and add it to the saucepan. Stir well.

  2. 4

    Simmer

Lower the heat and let the mixture simmer gently. Cook the rice in the milk for about 20-25 minutes, stirring occasionally to prevent it from sticking to the bottom.

  3. 5

    Add Sugar and Spices

Once the rice is fully cooked and the mixture has thickened, add the sugar and cardamom powder. Stir well until the sugar is dissolved.

  4. 6

    Incorporate Peaches

Gently fold in the chopped peaches and cook for an additional 5 minutes. This will allow the flavors to blend together.

  5. 7

    Add Saffron

Add the pinch of saffron strands to the kheer and stir gently to incorporate. Remove from heat.

Garnishing and Serving

  1. 8

    Garnish

Transfer the kheer into serving bowls and garnish with slivered almonds on top.

  2. 9

    Serve

Kheer can be served warm or chilled, depending on your preference. Enjoy this delicious rice pudding!
