Prepare the Sugar Syrup

    Make the Syrup

    In a saucepan, combine 2 cups of sugar and 1 cup of water. Add the cardamom pods and bring to a boil over medium heat.

    Simmer

    Once boiling, reduce the heat and let it simmer for about 5-10 minutes until slightly thickened. Remove from heat and stir in 1 tsp of rose water. Set aside to cool.

Prepare the Dumplings

    Mix Dry Ingredients

    In a mixing bowl, combine 2 cups of full-fat milk powder, 1 tbsp of all-purpose flour, and 1 tsp of baking soda. Mix well.

    Add Ghee

    Add 2 tbsp of ghee or unsalted butter to the dry mixture and mix until it resembles a crumbly texture.

    Combine with Milk

    Gradually add 1 cup of milk to the mixture while kneading it into a smooth dough. Incorporate 1 tsp of cardamom powder into the dough.

    Shape the Dumplings

    Divide the dough into small portions and roll them into smooth balls, ensuring there are no cracks.

Fry the Dumplings

    Heat Oil

    In a deep frying pan, heat 2 cups of oil over medium heat. To test if the oil is ready, drop a small piece of dough into it; if it sizzles and rises to the surface, the oil is hot enough.

    Fry Dumplings

    Carefully place the rolled dumplings in the hot oil, ensuring not to overcrowd the pan. Fry them until they turn golden brown, about 5-7 minutes.

    Drain and Soak

    Remove the dumplings from the oil and drain on paper towels. Immediately transfer them to the warm sugar syrup and let them soak for at least 30 minutes before serving.
