Marinade
Fish and Skewers
Method
Preparation of Marinade
- 1
Mix the Marinade
In a large mixing bowl, combine yogurt, minced garlic, grated ginger, cumin powder, turmeric powder, garam masala, lemon juice, salt, and red chili powder. Whisk until well blended.
- 2
Marinate the Fish
Add the fish cubes to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 20 minutes, or up to 2 hours for more flavor.
Skewering and Cooking
- 3
Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. This step is optional for metal skewers.
- 4
Assemble the Kebabs
Thread the marinated fish cubes onto the soaked skewers, leaving a little space between each piece for even cooking.
- 5
Preheat the Tandoor or Oven
Preheat your tandoor or oven to a high temperature of about 220°C (428°F).
- 6
Cook the Kebabs
Place the skewers in the preheated tandoor or oven. Cook for about 10-15 minutes, turning occasionally, until the fish is cooked through and has a slight char.
- 7
Serve
Remove the kebabs from the skewers and serve hot with mint chutney and lemon wedges.
