Marinade Preparation

Prepare the Chicken
Cut the chicken thighs into bite-sized pieces and place them in a large mixing bowl.

Mix Marinade
Add the grated ginger, minced garlic, cayenne pepper, mustard powder, vinegar, salt, black pepper, garam masala, and yogurt to the chicken. Mix well to coat the chicken evenly.

Marinate
Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for better flavor.
Breading and Frying

Prepare the Breading
In a separate bowl, combine the all-purpose flour, cornstarch, and baking powder. Mix until well combined.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches about 180°C (350°F).

Coat the Chicken
Remove the marinated chicken from the refrigerator. Take each piece of chicken and coat it with the flour mixture, ensuring it's fully covered.

Fry the Chicken
Carefully place the coated chicken pieces into the hot oil in batches. Fry for about 5-7 minutes or until golden brown and cooked through, turning occasionally.

Drain and Serve
Once cooked, remove the chicken from the oil and place it on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce.
