Marinade

For Cooking

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a mixing bowl, combine the plain yogurt, minced garlic, minced ginger, lemon juice, garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, salt, and black pepper. Mix well until all ingredients are fully combined.

  2. 2

    Marinate the Chicken

Add the cubed boneless chicken to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

Preparing and Cooking

  1. 3

    Prepare Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, they can be used directly.

  2. 4

    Assemble the Kebabs

Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

  3. 5

    Preheat the Tandoor or Grill

Preheat your tandoor or grill to a high temperature (about 200°C/400°F). If using a grill, lightly oil the grates to prevent sticking.

  4. 6

    Cook the Kebabs

Place the skewers on the tandoor or grill. Brush with a little cooking oil. Cook for about 15-20 minutes, turning occasionally, until the chicken is cooked through and has a nice char.

  5. 7

    Serve

Remove the kebabs from the skewers and serve hot with mint chutney or your favorite dipping sauce.
