    Roasting the Eggplant

    Preheat the tandoor or an oven to 400°F (200°C). Prick the eggplant with a fork and place it on the grill or in the oven. Roast for about 25-30 minutes until the skin is charred and the eggplant is soft. Remove and let it cool.

    Preparing the Vegetables

    While the eggplant is roasting, chop the tomatoes, onion, green chili, and fresh cilantro.

    Saute the Base

    In a pan, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Then add the chopped onion and green chili. Saute until the onion is translucent.

    Add Tomatoes and Spices

    Add the chopped tomatoes to the pan along with turmeric, coriander powder, and salt. Cook until the tomatoes are soft and the oil starts to separate from the mixture.

    Add Peas and Mashed Eggplant

    Add the green peas and mix well. Scoop out the roasted eggplant, mash it, and add it to the pan. Stir to combine all ingredients.

    Finishing Touches

    Sprinkle garam masala and fresh cilantro over the mixture. Stir well and cook for an additional 5 minutes to let the flavors meld together.
