Marinade
For Grilling
Method
Marinade Preparation
- 1
Prepare the Marinade
In a large mixing bowl, combine the plain yogurt, lemon juice, minced garlic, finely chopped onion, almond paste, garam masala, cumin powder, coriander powder, red chili powder, salt, and black pepper. Mix well until all ingredients are fully incorporated.
- 2
Marinate the Chicken
Cut the boneless chicken breast into bite-sized pieces and add them to the marinade. Ensure each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for best flavor.
Grilling
- 3
Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, ensure they are clean and ready to use.
- 4
Skewer the Chicken
Remove the marinated chicken from the refrigerator. Thread the marinated chicken pieces onto the skewers, ensuring they are packed closely but not too tight.
- 5
- 6
Grill the Kebabs
Place the skewers on the preheated grill and cook for about 15-20 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
- 7
Serve
Once cooked, remove the kebabs from the grill. Allow them to rest for a few minutes before serving. Enjoy your Badami Chicken Kebabs with mint chutney or your favorite dipping sauce.
