Sauté the Onions
Add the chopped onion to the heated oil and sauté until they turn translucent.

Add Spices
Add cumin seeds, turmeric powder, and coriander powder. Stir well and cook for about 1-2 minutes until fragrant.

Add Tomatoes and Green Chili
Add the chopped tomato and green chili to the pan. Cook until the tomatoes soften and oil separates from the mixture.

Add Cauliflower and Potatoes
Add the cauliflower roundels and potato cubes to the pan. Mix well to coat the vegetables with the spices.

Add Water and Cover
Pour in 1 cup of water, add salt to taste, and cover the pan. Let it simmer for about 15-20 minutes until the vegetables are tender.

Finish with Garam Masala and Coriander
Once the vegetables are cooked, sprinkle garam masala and fresh coriander leaves on top. Stir gently and cook for an additional 2 minutes.

Remove from heat and serve hot with roti or rice.
