Preparing the Turkey

Preheat the Oven
Preheat your oven to 325°F (165°C).

Prepare the Turkey
Remove the turkey from its packaging and take out the giblets from the cavity. Pat the turkey dry with paper towels.

Season the Turkey
Rub the olive oil all over the turkey, then generously season with salt and black pepper. Place chopped rosemary and thyme under the skin and inside the cavity.

Stuff the Turkey
Stuff the turkey cavity with lemon, onion, and garlic cloves. You can also add some of the stuffing mixture if using.

Roast the Turkey
Place the turkey breast side up on a rack in a roasting pan. Pour chicken broth into the bottom of the pan. Cover the turkey with foil and roast for about 13 minutes per pound.

Baste the Turkey
Every 30 minutes, baste the turkey with the pan juices to keep it moist.

Remove the Foil
In the last hour of roasting, remove the foil to allow the skin to brown.

Check for Doneness
The turkey is done when it reaches an internal temperature of 165°F (75°C) in the thickest part of the thigh. Let it rest for 20-30 minutes before carving.

Sauté Vegetables
In a large skillet, melt the butter over medium heat. Add the celery and onion, and sauté until softened, about 5-7 minutes.

Combine Stuffing Ingredients
In a large bowl, combine the sautéed vegetables, bread cubes, sage, cranberries, and pecans. Mix well.

Add Broth
Pour in the chicken broth, and mix until the bread is moistened. Adjust seasoning with salt and pepper to taste.

Stuff the Turkey or Bake Separately
You can either stuff the turkey with the mixture or bake it separately in a greased dish at 350°F (175°C) for about 30-40 minutes.
