Ingredients

Pasta Dough

Shrimp Filling

Balian Sauce

Preparation

Pasta Dough

1. Make the Dough

In a large bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Using a fork, beat the eggs and gradually mix in the flour until a dough starts to form.

2. Knead the Dough

Transfer the dough to a floured surface and knead for about 10 minutes until it becomes smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Shrimp Filling

3. Prepare the Filling

In a food processor, combine the raw shrimp, ricotta cheese, Parmesan cheese, garlic, parsley, lemon zest, salt, and black pepper. Pulse until the shrimp are finely chopped and the ingredients are well mixed.

Balian Sauce

4. Make the Sauce

In a saucepan over medium heat, heat the olive oil. Add minced garlic and sauté until fragrant, about 1 minute. Add crushed tomatoes, basil, oregano, red pepper flakes, salt, and black pepper. Simmer for 15-20 minutes, stirring occasionally.

Assembly and Cooking

5. Roll Out the Dough

After the dough has rested, roll it out on a floured surface until it's thin enough to see your hand through it. Cut into squares about 3 inches by 3 inches.

6. Fill the Ravioli

Place a spoonful of the shrimp filling in the center of each square. Moisten the edges with water and fold over to create a triangle shape. Press the edges to seal.

7. Cook the Ravioli

Bring a large pot of salted water to a boil. Add the ravioli and cook for 4-5 minutes, or until they float to the top. Remove with a slotted spoon.

8. Serve

Plate the ravioli and top with Balian sauce. Garnish with additional parsley and Parmesan cheese if desired.
