Cooking the Pasta

Boil Water
In a large pot, bring 4-5 liters of water to a boil. Add a generous pinch of salt to the boiling water.

Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions, usually about 8-10 minutes, until al dente. Stir occasionally to prevent sticking.

Drain Pasta
Once cooked, reserve about 1/2 cup of the pasta water, then drain the spaghetti in a colander.
Making the Red Sauce

Sauté Vegetables
In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes, until the onion is translucent and fragrant.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, black pepper, and sugar. Bring the mixture to a gentle simmer.

Let the sauce simmer for about 15-20 minutes, stirring occasionally, until it thickens slightly.

Combine Pasta and Sauce
Add the drained spaghetti to the sauce, tossing to coat the pasta evenly. If the sauce is too thick, add some reserved pasta water to achieve desired consistency.
