Main Ingredients

Method

Pork Tenderloin Preparation

  1. 1

    Prepare the Marinade

In a bowl, combine olive oil, minced garlic, chopped rosemary, salt, black pepper, honey, and balsamic vinegar. Mix well until all ingredients are blended.

  2. 2

    Marinate the Pork

Place the pork tenderloin in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best flavor.

  3. 3

    Preheat the Oven

Preheat your oven to 400°F (200°C) while the pork is marinating.

  4. 4

    Sear the Pork

Heat a large oven-proof skillet over medium-high heat. Remove the pork from the marinade (reserve the marinade) and sear it in the skillet for about 2-3 minutes on each side until browned.

  5. 5

    Roast the Pork

Pour the reserved marinade over the pork in the skillet. Transfer the skillet to the preheated oven and roast for 25-30 minutes or until the internal temperature reaches 145°F (63°C). Remove from oven and let rest for 5 minutes before slicing.

Vegetable Side Preparation

  1. 6

    Prepare the Vegetables

While the pork is roasting, prepare the asparagus and cherry tomatoes. In a mixing bowl, toss the asparagus with olive oil, salt, and lemon zest.

  2. 7

    Roast the Vegetables

Spread the asparagus and cherry tomatoes on a baking sheet. Roast in the oven alongside the pork for the last 15-20 minutes of cooking until tender and slightly caramelized.

  3. 8

    Finish the Vegetables

Once done, remove the vegetables from the oven and drizzle with lemon juice before serving.
