    Prepare the Home Fries

    Dice the potatoes into small cubes. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes, salt, black pepper, and garlic powder. Cook until brown and crispy, about 15-20 minutes, stirring occasionally.

    Sauté the Vegetables

    While the potatoes are cooking, chop the onion, red bell pepper, mushrooms, and cherry tomatoes. In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and red bell pepper, and sauté for 3-4 minutes. Then add the mushrooms and cherry tomatoes, and cook for an additional 3 minutes until the vegetables are tender.

    Add Spinach and Veggie Sausage

    Add the fresh spinach and veggie sausage crumbles to the sautéed vegetables. Stir and cook until the spinach wilts, about 2 minutes.

    Scramble the Eggs

    In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the vegetable mixture and scramble gently until the eggs are fully cooked.

    Combine and Serve

    Once the home fries are cooked, serve them on a plate and top with the scrambled veggie mixture. Sprinkle cheddar cheese on top before serving.
