Preparation and Cooking
1. Prepare the Filling
In a large mixing bowl, combine the shredded corned beef, grated potato, shredded cheese, grated carrot, salt, and black pepper. Mix well until all ingredients are evenly combined.
2. Assemble the Spring Rolls
Lay a spring roll wrapper on a clean surface. Place 2-3 tablespoons of the filling mixture in the center of the wrapper. Fold the sides over the filling and roll tightly from the bottom to the top. Repeat with remaining wrappers and filling.
3. Fry the Spring Rolls
Heat oil in a deep frying pan over medium heat. Carefully add the spring rolls to the hot oil, frying in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
4. Prepare the Dipping Sauce
In a small bowl, mix together mayonnaise, chili sauce, and lime juice until smooth. Adjust seasoning to taste.
5. Serve
Serve the hot Irish spring rolls with the chili mayo dipping sauce on the side.
