Making the Pretzels

    Prepare the Yeast

    In a small bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 5 minutes until it becomes frothy.

    Make the Dough

    In a large bowl, combine flour and salt. Add the yeast mixture and melted butter, and mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.

    First Rise

    Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Pretzels

    Preheat your oven to 450°F (230°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.

    Prepare the Baking Soda Bath

    In a large pot, bring 10 cups of water and the baking soda to a gentle boil. Carefully drop each pretzel into the bath for about 30 seconds. Remove and place on a baking sheet lined with parchment paper.

    Bake the Pretzels

    Brush the pretzels with melted butter and sprinkle with coarse sea salt. Bake in the preheated oven for about 12-15 minutes until golden brown.
