Prepare the Sausage
Preheat your oven to 200°C (400°F). In a skillet, cook the Irish sausage over medium heat until browned and cooked through. Drain any excess fat and let cool slightly.

Prepare the Dough
On a lightly floured surface, roll out the biscuit dough to about 1/4 inch thick. Cut the dough into rectangles large enough to wrap around the sausage pieces.

Assemble the Rolls
Place a piece of cooked sausage on each rectangle of dough. Fold the dough over the sausage and seal the edges by pressing with a fork.

Egg Wash
Beat the egg in a small bowl and brush it over the top of each sausage roll to give them a golden finish.

Bake
Place the sausage rolls on a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes, or until golden brown.

Serve
Remove from the oven and let cool slightly before serving. Enjoy your homemade sausage rolls!
