1. Prepare the Roast

Preheat your oven to 450°F (232°C). In a small bowl, mix together the kosher salt, black pepper, olive oil, minced garlic, rosemary, and thyme to create a seasoning paste. Rub this mixture all over the beef roast, ensuring it is well coated.

2. Roast the Beef

Place the seasoned beef roast in a roasting pan and put it in the preheated oven. Roast for 15 minutes at 450°F, then reduce the temperature to 325°F (163°C). Continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (135°F for medium-rare, 145°F for medium).

3. Rest the Meat

Once cooked, remove the roast from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.
