    Prepare the Potatoes

    Wash and peel the potatoes. Use a mandoline slicer to slice the potatoes thinly, about 1/8 inch thick.

    Soak the Slices

    Place the sliced potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the potatoes and pat them dry with a clean kitchen towel or paper towels to remove moisture.

    Heat the Oil

    In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add a handful of potato slices to the hot oil, being careful not to overcrowd the pot. Fry until golden brown and crispy, about 3-5 minutes.

    Drain and Season

    Use a slotted spoon to remove the chips from the oil and transfer them to a plate lined with paper towels to drain excess oil. While still warm, sprinkle with salt to taste.
