Prepare the Filling
In a mixing bowl, combine the ground pork, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, and chopped cilantro. Mix well until all ingredients are evenly combined.

Assemble the Pot Stickers
Lay out a wonton wrapper on a clean surface. Place about 1 tablespoon of the pork filling in the center of the wrapper. Moisten the edges of the wrapper with a little water, fold it over to form a triangle, and press the edges to seal. Repeat with remaining wrappers and filling.

Cook the Pot Stickers
Heat a large skillet over medium heat and add a tablespoon of oil. Once hot, place the pot stickers in the skillet, flat side down, and cook for about 2-3 minutes or until the bottom is golden brown. Add 1/4 cup of water to the skillet and cover immediately. Allow to steam for about 5 minutes.

Serve
Remove the lid and let any excess water evaporate. Serve the pot stickers hot with sweet chili sauce for dipping.
