1. Prepare the Brisket

Rinse the corned beef brisket under cold water to remove excess salt. Place it in a large pot.

2. Add Ingredients

Add water, pickling spice, garlic cloves, and bay leaves to the pot. Bring to a boil over medium-high heat.

3. Simmer

Once boiling, reduce the heat to low, cover, and let it simmer for about 3 hours or until the brisket is tender.

4. Prepare the Cabbage

About 30 minutes before the brisket is done, heat olive oil in a large skillet over medium heat. Add shredded cabbage and sliced carrots. Season with salt and black pepper to taste.

5. Cook the Cabbage

Sauté the cabbage and carrots for about 10-15 minutes, stirring occasionally until tender.

6. Serve

Remove the brisket from the pot and let it rest for 10 minutes. Slice against the grain and serve over the sautéed cabbage and carrots.
