Prepare the Ingredients
Slice the onion and bell peppers into thin strips. Mince the garlic cloves.

Sear the Beef
In a large skillet, heat the olive oil over medium-high heat. Season the beef with salt and black pepper. Sear the beef on all sides until browned, about 3-4 minutes per side. Remove from skillet and set aside.

Combine Ingredients in Slow Cooker
Transfer the sautéed vegetables to a slow cooker. Add the seared beef, diced tomatoes (with juice), beef broth, cumin, oregano, and bay leaves. Stir to combine.

Slow Cook
Cover the slow cooker and cook on low for 6-8 hours, or until the beef is tender and easily shreds with a fork.

Shred the Beef
Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and mix with the sauce.

Serve
Serve the ropa vieja hot, over rice or with crusty bread, if desired.
