Papa Rellenas

Prepare the Filling

Boil the potatoes until soft, then mash them. In a pan, sauté onions and garlic until translucent, add ground beef, cumin, salt, and pepper. Cook until beef is browned. Mix with mashed potatoes.

Shape and Fry

Shape the potato mixture into balls, flatten slightly, then fry in hot oil until golden brown.

Croquetas

Make the Mixture

In a saucepan, heat milk and add flour to make a roux. Stir in chopped ham, salt, and pepper until thickened.

Shape and Fry

Let the mixture cool, shape into small logs, dip in beaten egg and breadcrumbs, and fry in hot oil until golden.

Empanadas

Prepare the Filling

In a pan, sauté onions and bell peppers in olive oil. Add ground chicken or beef, salt, and pepper. Cook until meat is done.

Assemble and Bake

Place filling in the center of each dough disc, fold over, seal with beaten egg. Bake at 375°F (190°C) for 20 minutes or until golden brown.

Serving

Serve with Sauce

Arrange papa rellenas, croquetas, and empanadas on a platter and serve with your choice of salsa or dipping sauce.
