Prepare Caramel

In a saucepan over medium heat, combine the granulated sugar and water. Stir until the sugar dissolves, then stop stirring and allow it to boil until it turns a golden amber color.

Pour Caramel

Quickly pour the caramel into a round baking dish, tilting the dish to coat the bottom evenly. Set aside to cool and harden.

Mix Custard

In a mixing bowl, whisk together the eggs, sweetened condensed milk, evaporated milk, and vanilla extract until well combined.

Combine and Blend

Pour the custard mixture through a fine mesh strainer into the caramel-coated baking dish to remove any lumps.

Bake

Preheat your oven to 350°F (175°C). Place the baking dish in a larger baking pan and fill the pan with hot water until it reaches halfway up the sides of the flan dish. Bake for about 50-60 minutes, or until the flan is set and a knife inserted comes out clean.

Cool and Serve

Remove the flan from the water bath and let it cool at room temperature. Refrigerate for at least 4 hours, or overnight. To serve, run a knife around the edges of the flan and invert onto a serving plate, allowing the caramel to drizzle over the top.
